Abstract

A snack food made of chickpea, corn and bovine lung was developed in order to increase the offering of high biological value protein, and minerals aimed at programs to reduce the occurrence of anemia and malnutrition. The impact of its use was assessed in two nursery schools, each of them with 130 children ranging from 2.8 to 6.9 years old. At one nursery, each child received, besides the usual diet, a 30g pack of snack every other day, three days a week and at lhe other nursery, the control. they had the usual diet only. The prevalence of malnutrition was estimated from the weight / age (W/A) index. The data obtained from the experimental group showed that, after the intervention, the prevalence of moderate to severe malnutrition (W/A below the 3rd percentile) was reduced from 6.9% to 3.8% and that of light to moderate malnutrition changed from 25.4 to 16.6%. No significant change in this index was observed in the control group. In the experimental group the percentage of nutritionally adequate children (W/A above the 10th percentile) raised from 67. 7 to 80.1% and remained practically constant in the control group (73.1 to 74.6%.). Short intervention periods like the one described here usually do not affect malnutrition indexes that require long-term programs to exhibit good results. However, the observed improvement in the nutrition status of the children was significant and demonstrates the high potential of the snack for malnourished children, in addition to its already reported positive impact on anemia.
